Hidden gems....


This morning I went into the cellar to empty the dehumidifier (I empty it into my weedy garden). I planted a pumpkin when we first moved in, with hopes that I would have a homegrown one for Halloween. When I pulled up the vine to see if anything was there I noticed something else...POTATOES!! I was so excited...I felt like a little kid looking for Easter eggs. I must of found a couple of pounds of potatoes!

Do you know how to grow them, or keep them growing? Please tell me..this was a first for me:)

I had never picked a potato before...


I was hungry, so I made potato salad for lunch!

 Potato & Leek Salad

4 medium sized potatoes ( I used all but 3 in the picture)-peeled and chopped
2 tbsp olive oil
1 leek/white part only- sliced
2 stalks celery-small diced
3 dill pickles-minced
2 heaping tbsp vegenaise
1 tbsp mustard
3 tbsp fresh chopped parsley
sea salt
pepper
splash  of Tabasco

In a large pot boil potatoes until soft..but not mushy (about 5-8 minutes). Drain and run under cold water. Set aside.
In a saute pan heat/ add oil/ add leeks. Saute until soft.
In a large bowl combine potatoes, leeks, and the rest of the ingredients. Stir and season to taste.

  1. You know I've never grown potatoes myself, but they must grow easily if you were growing them and didn't know it. I will definitely try your potato salad recipe, looks so good!

  2. OMG, Kirsten, that is priceless! Here I am trying like all get out to grow ONE potato and you get the lottery without even trying! Okay. . . I am jealous! So I would offer some advice, but clearly, I know NOT about growing the lovely potato. Hopeful for next year to be better! One thing I do know--don't replant them in the same spot next year or you will have "problems". You probably already know about crop rotation, but thought I could offer that!

  3. What a nice surprise finding potatoes you didn't even know about. Sorry not sure about growing potatoes, I know you don't need a whole lot to get them going.

  6. Maria Rose...I guess the people that live in the house before us planted them. I have no idea how to grow them, but I did find out that if you leave a couple in the ground, they will grow again next season :)

    Kelly...I am new to this and have no idea what I am doing, I just plant the seed and hope for the best.

    Serene...I don't actually have a garden...yet. I just lucked out with the potatoes. The people that lived here before us must of planted them. Right now its a weedy mess, I hope to get it going next year :)
