Black Bean Burger with Sauteed Mushrooms & fresh Cilantro


This is a great recipe for leftovers...I made it last night for the family for dinner,
And was able to have another one for lunch this afternoon with the kido!
Still have enough in the fridge for another 2 portions. I thought of making a fresh salsa for the top but the tomatoes at the store were not looking so hot.


  • 2 1/2 cups cooked black beans-drained
  • 2 tbsp veggie oil
  • 1 onion-minced
  • 2 cloves garlic-minced
  • 1 stalk celery-minced
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1 tsp dried oregano
  • 1/4 tsp chili powder
  • 1 tbsp Dijon
  • 1 tbsp balsamic vinegar
  • 1/2 cup bread crumbs
  • 2 tbsp flour
  • sea salt
  • freshly ground pepper

In a saute pan, heat oil, Add onions,garlic,and celery. Saute for 3-4 minutes.
Add spices, saute for about 3 more minutes.
In a large bowl combine beans and onion mixture together.
Add the rest of the ingredients and mush it together really well.
Shape into patties and fry in a pan with a little oil, until it forms a crust on each side.

Tofu Burger with Sesame Potato Wedges



I seem to incorporate things I have learned in the past from eating and working at different restaurants in my cooking.  We were unfortunately out of vegan mayo so I smeared some hummus on the burger, which was really
tasty! Tofu is one of those flavorless foods that can be made into any type of cuisine. This time I used balsamic on the tofu, and a little maple syrup.
This was really simple to make.
For the potatoes, cut into wedges, drizzle with half olive oil & sunflower oil. Sprinkle sea salt, garlic powder, oregano, and sesame seeds. Place on a pan in a 400 oven for 20-25 minutes.
