Banana date flax loaf
I had a bucket of dates in the cupboard screaming to be used, and I wanted to make something that would be around for a couple of days just in case the baby decides to make an appearance. Easy for the family to have a snack.
1 1/2 cups unbleached flour
1 tsp baking soda
1 tbsp ground flax seed
1/4 cup organic cane sugar
3 very ripe bananas-mashed
2 tbsp ground flax seed mixed with 6 tbsp boiling water
1/2 cup soy milk
1 tsp apple cider vinegar
1/2 cup chopped dates
1 tsp vanilla
1/4 cup sunflower oil
In 2 medium sized bowls mix dry ingrigents together, and wet together
Pour wet into dry and mix until combined
Pour into a greased loaf pan, and bake @ 350 for 1 hour or until done.

I love banana bread, never even thought of adding dates. Sounds good!
ReplyDeleteI know..I never add dates to much stuff. I have been reading a few other vegan blogs that use dates in smoothies! I like the idea that it cuts out a lot of the sugar that recipes usually have.
