I was at Pete's Frootique the other month and they had a vegan soup just like this one on the menu. It was so good, and then I forgot about it. Last night I was rummaging around in the cupboards to find something I could use for dinner, and I found huge sweet potato and remembered. The peanut butter adds a nice flavor, and you could always add a bit more chili if you like it spicy!
Sweet Potato and peanut soup
2 tbsp sunflower oil
1 onion- chopped
2 tbsp fresh ginger- minced
2 cloves garlic-minced
1 tsp cumin powder
1 tsp dried chili flakes
pinch ground clove
1 large sweet potato- peeled and cubed
1 small white potato- peeled and cubed
1 tomato- chopped
1 carrot- peeled and chopped
6-8 cups water
1/3 cup peanut butter
1/2 lime juiced
2 tbsp maple syrup
sea salt- to taste
1/4 cup coconut milk
In a large pot heat oil , add onion, saute until soft. Add ginger and garlic saute for 3-4 minutes
Add spices, let absorb.
Add the potato, tomato, carrot. Pour in water.
Bring to a boil and allow to simmer for 20 minutes or until vegetables are very soft.
Add peanut butter and blend in batches.
Season with lime,salt and maple syrup.
Finish with coconut milk.
Garnish with fresh cilantro/ toasted peanuts
This looks delish! I just bought some sweet potatoes the other day--had a hankering for some--would be wonderful in a spicy, peanutty soup!
