Shinin' in the sun









Ol' man Simon, planted a diamond. 
Grew his self a garden the likes of none. 
Sprouts all growin' comin' up glowin' 
Fruit of jewels all shinin' in the sun.
Colors of the rainbow. 
See the sun and the rain grow sapphires and rubies on ivory vines, 
Grapes of jade, just ripenin' in the shade, just ready for the squeezin' into green jade wine.
 Pure gold corn there, 
Blowin' in the warm air.
Ol' crow nibblin' on the amnythyst seeds. 
In between the diamonds,
 Ol' man Simon crawls about pullin' out platinum weeds. 
Pink pearl berries, all you can carry, put 'em in a bushel and haul 'em into town. 
Up in the tree there's opal nuts and gold pears- Hurry quick, grab a stick and shake some down. 
Take a silver tater, emerald tomater, fresh plump coral melons. 
Hangin' in reach.

Our European adventure:part 2




Ola from Portugal! Well we are in the thick of it, just under half way through and everything has been amazing...we have drove through the Asturia mountains of Spain and on to Portugal. 
Traveling with children is great experience. People have been very welcoming to us, always stopping and looking at the baby and playing with Leeluu. It feels like the family ties are very strong here in Europe and for that I am grateful.



After Bilbao we drove to Cantabrian coastline, where we spent the day at Parque Natural de las Dunas de Liencres. A beautiful beach with meteor like rocks that provide a shady spot. We packed a lunch and explored the shore, a great day it was!



I really enjoyed driving through the north mountains of Spain, it was SO lush and green. We stopped in Ladines which is a very remote small mountain village. I had no idea that it was like that when I booked the place. What a pleasant surprise! The town people were super nice. There are cows and sheep everywhere with bells around there neck! Hearing the bells ring into the evening...its like a different world. Very cool.



On to Porto. I was super excited about this city because this is where the wine cellars are. We took a tour of Sandeman. It was really neat to learn about how Port is made and the tasting was fun too. Ocean and I had a nice day out and about in the city. We went to a famous bookstore  "Lello"...but we couldn't take photos. It was right out of a harry potter movie! Very cool staircase, carved wood walls with a huge stain glass ceiling. I just sucked it all in, hoping to remember it when I am old and wrinkly.


We are now in Lisbon...a beautiful city. Reminds me very much of the west coast. The coast is lined with beach after beach, the metro passes directly by them so you get a great tour. The highlight of this city for us has been the Oceanario, one of the worlds best aquariums.  This place is a must for families. Not only do they have tons of different species of fish, but they also have a mission to protect and conserve our oceans.


On our way down to the Algarve and then back over to Spain to spend some time in the sun! Keep you posted :)

Our European adventure: part one

Hola from Spain! This has been an amazing adventure, so many sites to see and things to do. We can not possibly do them all ( although we are trying). The first week we were here, staying at hotels was hard because I was unable to do any cooking. Which means eating out....with the language barrier I am sure I have eaten some non-vegan friendly food! HA We have tried our best though. From here on in, we are staying at apartments with kitchens. I really enjoy the markets here, just buying groceries is an experience. I am now looking forward to cooking for my family for the remainder of the trip.

Simone has started to eat which is fun. She has taken a liking to olives! I have also given her fresh strawberries, avocado, banana, and peaches, and even a little taste of baguette :)

I enjoyed being in the south of France very much. We visited with some friends in a town called Pezenas.  So far this has been my favorite place on the trip...fresh food and antique markets made it even more charming. We have rented a car and the driving has been great! ( thanks to the GPS hehehe). There is grape fields everywhere!!

 We have stopped in little towns here and there, and are now back in Spain. Spent the day at the Guggenheim yesterday in Bilbao. What a site to be seen!



At this point I think the whole family has adjusted to the way of life for the next little while. We are making our way into Portugal in the next few days, but before we do that we are going to do a few beach sessions! I hope to post some food in the next little bit. Vegan Parenting

Hello Everyone. I was honored to be invited to post on Kirsten's blog for a bit while she is away on her European adventure. For those of you who don't know me I have a daily blog over at Little Things Are Big. Nice to meet you!


When my husband Eric and I first started to seriously consider starting a family we had been vegan for about 7 or 8 years. I was well versed in the facts of vegan nutrition as they pertained to normal adults. I knew where to get which nutrients, those that impeded the absorption of others and I had a good handle on how to meet our daily requirements (I challenge you to find a non-vegan so well-educated about the same topics). I had done tons of research over the years because when people discover that we are vegan there are always questions. Questions like, "Where do you get your protein ?" (Soy, legumes, fortified vegan products, grains, nuts, leafy greens, etc.) "Where do you get your iron?" (legumes, molasses, cereals, fortified products, spinach, broccoli, etc.). I don't really like being put in the position of defending myself, but I soon learned that people were mostly just curious.

Anyway, when we really began to think about starting a family of our own I realized that I had never really researched whether or not a vegan diet was healthy for pregnancy or for children. I assumed that it was perfectly healthy, but when I began to think about it I didn't know any vegan children. I wasn't about to go into the process without hard evidence. So, I set out to discover the facts. I spoke with doctors and pediatricians (non-vegan ones to boot) and they all seemed to agree that, done correctly, this diet would be a healthy choice for our family.



7 months pregnant and vegan

So, I became pregnant. I quickly learned that eating for vegan pregnancy was pretty similar to normal vegan eating. I made sure to get more Omega 3-fatty acids (flax and fortified products) for brain development, and lots of iron and calcium. Overall I just kept eating well. I added a vegan pre-natal vitamin to the mix, just for extra assurance. I also added the recommended 300 extra calories a day. With my first pregnancy I maintained a really healthy weight, gaining nearly 20lbs  (which my non-vegan doctor praised) and Cordelia was born at 7lbs and in perfect health. I am currently pregnant with our second daughter and am having the same experience.

When Cordelia was a baby she nursed exclusively until she could start incorporating first foods---which are vegan: rice, fruits, veggies. Slowly we began introducing her to our way of eating and it is all she has ever known. With each pediatric check up she has maintained excellent health and weight. She is developing right on track---if not a bit advanced. So I can now say, with some confidence that I can raise a vegan child to be healthy.

Now we are onto a new phase in vegan parenting and this one has me nervous...entering the real world. Currently Cordelia seems to accept when I say, "Oh that cake isn't vegan and we only eat vegan cake (or whatever)." However, we have had instances where people come up and try to give her food...non-vegan food. We have been there to politely decline and she really does seem fine with it. When we attend birthday parties I check with the family and offer to bring some vegan cupcakes and thus far it has been gratefully accepted.

We are on the cusp of needing to give this girl an explanation about her unique diet. She will occasionally proclaim with pride, "I'm a vegan.," but her understanding of that fact is, of course, quite limited. I don't want to confuse her or give her too many disturbing details, so we are mostly just waiting for the questions as they arrive.

The first couple of years of vegan parenting have been a breeze, but now we are in the thick of it...or just getting there. I firmly believe that a vegan diet is the right choice for our family, but rarely are the right choices and the easy choices one and the same. Are you a vegan parent? Do you plan to be? DIY diaper detergent



I used cloth diapers for all 3 of my kids, the first one (15 years ago) the diaper were pretty basic nothing like what they are today.  When my second child came, twelve years later, I still had the diapers that I used with my first. I upgraded to some AIO (all in ones). They are awesome, rarely leak and little to no diaper rash.

I use to just wash my diapers with the regular laundry detergent, but they would get smelly after a while. Sunshine is a natural diaper cleaning agent, but when it's winter. Hanging diapers outside...well they would take a while.

I started Googling  natural diaper detergents and found some really good recipes. I thought I would give it a try. I only use 1 or 2 tbsp of this. I have a top load washing machine...so I can fill up the washer with diapers and water, let them soak for 30 minutes, and then run it.  I am super happy with the price and results!!



Find a big container and fill it with equal parts of washing soda and borax.
Then grate a bar of Dr.Bronners soap ( I use peppermint, it leaves a nice smell), and run it through a food processor.  Pour it into the container and give it shake to mix it all up.

2011

This year has past so quickly, it is nice to look back and share some of the highlights.  First off the renovation of our downstairs. I was without a kitchen for 5 months. That was intense, but once everything was done I was really happy with the way it turned out. High fives to Jonathan's brother Jason! There are a few things that we still need to do, but its a work in progress.

I also discovered I was pregnant around the same time I was without a kitchen. Let's just say I am super happy I don't have to wash dishes in the bathtub anymore! That sucked :P We went to the beach quiet a bit in the summer, I also was a vendor at the Farmers Market again this year. I love getting to participate in such a wonderful community.

My mom and dad came to visit in June, we went to New Brunswick for a getaway. I miss my mom and dad  so much, I wish they lived closer.  When they do come and visit they always help out around the house, this year they came and helped finish off the down stairs bathroom. Thanks M&D!

Ocean started her last year of Jr.High...its hard to believe that she will be driving next year!!! Leeluu also started school, preschool. She is starting to warm up to the idea :P

We welcomed our newest member of the family in October, Simone Kali. It was a wonderful birth experience, thanks to my doula Amy! She was my rock. The birth went quickly, 3 1/2 hours and I did it au'natural. Something I am very proud of :)

On to the food!! Some of my highlights of what I have been creating in my kitchen this year were during Vegan MOFO. It was a lot of fun to try and blog about vegan food every day during the month of October. I think I missed a few days here and there, but that's okay, during the time I was introduced to new vegan food blogs that made my tummy grumble :P

Waffles goodbye

Apple cinnamon waffles

I needed a reason to dust off the old waffle maker and having my brother here was a pretty good one.

Vegan Waffles


1 1/2 cups flour
1 tbsp sugar
1 1/2 tsp baking powder
1 1/4 cup milk
2 Ener-G egg replacements
1 tsp apple cider vinegar
1 1/4 cup soy milk

Combine dry ingredients in a medium sized bowl.
Mix wet together. Pour into dry. Mix.

Apple cinnamon waffle topping

1 tbsp of earth balance
1 apple-cored,peeled and sliced
2 tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp cardamon

In a small sauce pan over medium high heat combine ingredients allow to simmer until apples are soft.


I took my brother and his wife to the train station this morning, it was sad to say goodbye :( We had a great visit! I had some friends over for dinner last night. I busted out the old bingo game that was my great grandmothers, we use to play it in her basement for holidays and birthdays. My nanny always had prizes, so I did the same. I think it brought back memories for the both of us. It is strange to think that my brother probably won't see Simone for awhile, she will be walking and talking the next time. They had a camera so I was able to take some photos!! This is one of my favorites :)

Pirate Treasure!

It has been super warm out, for December. We hit the beach yesterday and went looking for treasure.
AHOY MATEY!!

Meals have been simple. I made this salad last night, it was really tasty. I guess it depends on the sweetness of the grapefruit though. Pomegrante is super good for you and when they are in season you should include them in your diet. 

Grapefruit Dressing

the juice of one grapefruit
3 tbsp olive oil
1/ tsp dijon
1/4 tsp poppy seeds
black pepper

Summer time


We went to New Brunswick last week, Jonathan went for business and we just tagged along for the hotel, pool and food.  I feel like I have been neglecting my blog because of the camera situation, its just not same without one :(

We did the tour of Moncton, Saint John, and Fredericton. New Brunswick is really rural, mostly trees the drive is pleasant. During the week Leeluu and I did the tourist thing, we went to community water parks, hotel pools, we visited the Saint John farmers market and  thrift stores.

On the weekend we booked a few nights at a bed and breakfast, but it was not your typical B&B. We stayed at lovely spot just outside of the Bay of Fundy National Park, An Artists Garden. Everything about this place was special, and I could tell that a lot of love went it to the design and building of it. It was really nice that there was a kitchen in our room, and a claw foot tub. Check out this awesome retro oven!




Karin the owner, let Leeluu play in the room next to ours when it was empty, there was a secret hide out in the loft. Of course Leeluu loved it.  We went into the town of Alma and ate at the Octopus Garden, the soup was delicious as was the homemade strawberry lemonade. We visited Cape Enrage and got a tour of a 150 year old light house. It cleared up that night so we had a windy beach fire.

The next day we headed for home, not without a stop at the water slides though :) I hope everyone is having a great start to the summer!
