I have been doing quite a bit of soul searching the last few weeks..finding what and who is important to me. It has not been easy, but it has been worth it. Meditation is helping me clear my mind. I have a bit of aggression in me too, so I am looking into kick boxing. Has anyone ever taken that up? I would love to have some input into weather it is a good outlet.
Been keeping the cooking pretty simple..quick one-pot-meals. Breakfast, lunch, dinner..this scramble can be any, or all of these. I love adding potatoes to a tofu scramble, it is more filling. Adding some greens, fresh herbs and hot peppers makes it even more tastier!
A cast iron pan works best to brown the potatoes. Then I just mix everything else together, and cook it for 5-6 minutes. This particular scramble I added mushrooms, kale, fresh sage and hot peppers. Along with tofu and nutritional yeast. What do you put in your tofu scramble?

I toss in any and all veggies, nutritional yeast, sometimes Daiya, salsa, tomatoes...just depends on what is laying around. Looks delicious!

Good! I need to be too tired to be upset :) Kale is good in scramble...I like that that I am getting good green intake.
