Vegan MOFO #3 { Kohlrabi slaw }



I received a gift from my friends garden the other day.  A beautiful kohlrabi! I know that some people are like what the heck is 'kohlrabi'? This vegetable is from the cabbage family and this is time of year that they are harvested in my neck of the woods. It is like a big turnip that tastes like cabbage and broccoli mixed together.

Since the weather has been beautiful, as it always seems to be in Nova Scotia around this time of year. I don't want to spend my days inside. Much rather be at the beach! Now my theme for vegan MOFO is 'autumn harvest', I thought that it would be a great start to my recipes of with a simple raw salad.  This is a one trick pony kinda slaw, easy and tasty. You can serve it along side a meal or eat it on its own...it would probably even be good in a wrap!

Kohlrabi



{ Kohlrabi Slaw}

1 small kohlrabi- peeled and grated
1 cup of red cabbage- shredded
1/2 cup freshly chopped parsley
1 tsp apple cider vinegar
1 tsp sunflower oil
1/4 tsp maple syrup
pinch of salt

Mix everything together in a bowl and eat!

  2. I've seen it a grocery stores from time to tim but never have I tried kohlrabi. The next time I come across some I'm going to stop being a baby and try it.
