Home sweet Home: vegan tapioca pudding



As most of you guys know, my family and I went on a trip to Europe for two months. Our trip fantastic, aside from Leeluu scratching the hotel's front door with a rock, causing an insurance claim, filling up our diesel car with gasoline... oh, and getting our car broken into "Goodbye, laptop!", as well as missing one of our flights, and you can't forget the hospital trip for my three year old who smashed her head on a wall. It was a great trip, I enjoyed the food, the people were super nice, and the scenery was...wicked!!

We arrived back to our home in Nova Scotia a few days ago... I drove thirteen hours from Montreal alone with my three daughters, for a lack of another expression, it was a long drive. We were so excited to get home that the thought of our own beds pushed us onwards. When we opened our door we were attacked by fleas!!!!  Those little bastards were all over the place and with no dog in sight, the vibration of our feet on the floor woke them up and they wanted to feast! 

I didn't have the energy to deal with it, besides, it was 11:30 at night. "So we meet again, Holiday Inn!" The next morning I dropped my kids off at a friends' house so that I could come and assess the situation. I went to the vet and asked about how to deal with this. The vet said it was normal, especially this time of the year....So I cleaned the house and treated the dog. Fortunately, it seems like everything is under control now, but it was a long couple of days. I am happy to be home!



I thought I would kick off the summer and Canada Day with a simple dessert, tapioca pudding with fresh strawberries! This was easy to make and the baby liked it too!!


1 cup water
1 cup rice milk
1 cup coconut milk
1/2 vanilla bean- split & scraped
1/2 cup tapioca pearls
4 tbsp sugar
2 tbsp tapioca starch
3 tbsp coconut milk
1/4 cup shredded coconut flakes
fresh fruit: strawberries, banana, blueberries...etc.

In a sauce pan bring liquids and vanilla bean to a boil. Add pearls. Simmer for 10-15 minutes until they become translucent. Mix together sugar, starch, and coconut milk. Keep stirring, you don't want it to burn or stick. Stir in the coconut flakes. Scoop into small dishes. Refrigerate for an hour or so. Add fruit. Enjoy!

  1. Oh, now, when did leeluu smash her head? Is she alright? And flies? Ew. I hope you did get rid of them. It was so great meeting you! Thank you for the picture, It's fantastic!

  2. She is my wild child :) She did it in Barcelona the last week of our vacation. Yeah she was o.k. after, I think I was a little more concerned when the gush of blood started pouring out. :P I loved meeting you too! I hope you will come to Canada one day, and we will meet again.

  4. I guess with two months of vacation (!) there’s bound to be some down falls, but what’s a trip without some crazy stories to bring home. I’m glad that Leeluu is doing ok and the flee problem has been rectified. I can’t even comprehend how amazing your trip must have been! Welcome back, can’t wait to read some of your future posts.
    Surprisingly, I’ve never tried tapioca before, is it kind of like chia seed pudding but with bigger blobs? (and by blobs I mean the pearls :))

    Thanks Maggie! It was a wonderful trip. I had never used tapioca pearls before, I think that the chia seeds have a better nutritional kick. I have never worked with those either yet. Soon though :P
