Power lunch



I am on the no-sleep schedule these days. I find it difficult to take a nap in the day when the baby is sleeping, just because I get doing things and forget. By 7pm I am wiped (the no blogging lately is a result). Meals are quick and easy, and pre-planned.

I have been making a list of 5 to 6 meals a week, that way I don't need to go to the grocery store as much and I don't need to think about it. I just know what we are eating for dinner. Lunches are really just left overs from the night before.  That is where this power lunch came about.

I was surprised how good this was, so I thought I would post it :)

Power Lunch

1 tbsp olive oil
1/4 onion- sliced
1 clove garlic-minced
1/4 cup red pepper- sliced
1/2 bunch of kale- chopped roughly
1 Tofurkey Italian sausage- cut into rounds
1/4 avocado- sliced (optional)
1 tsp balsamic vinegar
sea salt
freshly ground pepper

Heat oil in pan, add onions and garlic saute for 2-3 minutes until soft.
Add red pepper, kale and sausages. Saute until kale turns bright green.
Pour the balsamic vinegar over. Season with sea salt and pepper.
Garnish with avocado.
