Blueberry Banana Crumb Muffins

I have had a bunch of bananas sitting in my fridge for the last few days and they were looking very sad :(  I like to freeze bananas that don't look so appetizing anymore. I take them out and put them in a bowl on the counter to defrost. There is a yuck factor to them, super slimy, but the flavor in baked goods is AWESOME!  I had every intention of using them that day (which was 3 days ago). So in the fridge they went waiting to be used in something yummy.

What could be yummier then fresh baked muffins in the morning? Bananas have there own sweetness, especially when they are at there peak of ripeness, so I cut down on the sugar. I think I could of left the sugar out.

2 cups flour
1 tsp baking soda
1/4 cup organic cane sugar
1/4 tsp sea salt

3 ripe bananas
1 cup almond milk
1/4 cup vegetable oil + 1 tbsp
1 tsp vinegar

1 cup blueberries

1/4 cup flour
1/4 cup oats
3 tbsp organic sugar
3 tbsp earth balance

Preheat oven to 350
Mix dry ingredients in large bowl
Mix wet ingredients in medium bowl
Pour wet into dry. Mix well.
Fold in blueberries

Spoon into greased muffin tin, crumble topping over and bake for 30 minutes

  1. These sound really good — I like my muffins on the less-sweet side so I like that you reduced the sugar.

  2. Yum.
Went to the Hubbrds market for the first time yesterday and missed you:(

  3. Nothing could be yummier than this--crumbs, blueberries=pure delish! (Though I did chuckle at the whole banana story because I do the same thing and feel the same way when time comes to use the darn things--ick!)

  4. Those look really, really good! I love blueberries and I love everything with a crumb topping!

  5. I did the whole freezing bananas thing for the first time last month and oh my goodness, major yuck factor! I had the "I'm gonna puke" feeling in my throat the entire time the thawed remnants oozed out of the peel, but in the end, so worth it – best banana bread ever!

  6. Andrea...I have a bit of a sweet tooth, but these you could definitely omit the sugar :)

AliceinParis...:( It would have been really nice to see you. I am there August the 7th!

Kelly....Those darn things are icky! haha

Mihl...Thanks...I love everything with a crumb topping too. I just bought some peaches...cobbler?

Katie...YES! They do make the best banana bread EVER!
