Cooking for 1 and a 1/2



Tonight I cooked dinner for myself and my 15 month old. Wanted to keep it simple, as per usual :P  I normally have an extra pair of hands some times 2, to keep the monkey out of the kitchen. But tonight as the saying goes "forgetaboutit". So  I threw a sweet potato in the oven (poked it with a fork a few times) for an hour, steamed up some veggies, chopped up some onion and mushrooms, and cooked up some tofu (marinated in balsamic, olive oil, garlic powder and maple syrup.) in my new cast iron pan.
Of course it was delicous!
Tofu steak and with sauted mushrooms and onions served with a baked sweet potato and steamed greens!
