Pea soup

I was looking for something I could feed the baby and the rest of the gang, I was surprised to see how much iron is in split peas (30%). I am always on the look out for high in iron foods, for Leeluu.


  • 1 tbsp olive oil
  • 1 onion- chopped
  • 3 carrots- peeled and chopped
  • 3 small potatoes- peeled and chopped
  • 2 bay leaves
  • 1 cup of split peas
  • splash of apple cider vinegar
  • salt and pepper to taste

in a medium sized pot, sauteed onion in olive oil, add carrot, potatoes, peas, and bay leaf.
add water until pot is about half way full. bring to a boil
simmer until peas are soft and mushy.
I like to blend my soup a little with a hand blender, but you don't need to.
season. enjoy:)
