Chocolate banana peanut butter pie
I needed a chocolate fix. I sorta winged it, I didn't have any butter for the crust, so I used sunflower oil. Butter would be much better if you have it, just melt it first.
1 1/2 cups graham cookie crumbs
1/4 sunflower oil, or melted earth balance
2 tbsp coconut flour
2 ripe bananas
1 tsp vanilla extract
3/4 block of medium tofu or firm silken
2 tbsp peanut butter- smooth
1 tbsp brown rice syrup
1/2 cup dark chocolate-melted
1 1/2 tsp agar agar powder
Mix the crumbs and flour together with oil/butter. Press down firmly into a pie plate.
Bake at 350 for 15 minutes.
In a food processor, mix together next 5 ingredients.
While you are melting the chocolate add the agar agar ( it needs heat to be activated).
Stir chocolate into banana mixture. Pour into crumb crust, and refrigerate overnight...if you can wait that long!
