How to make Wheat 'Meat' sausage

seitan sausage


For this you need wheat gluten flour....2 cups

 1 Tbsp  toasted fennel seed crushed

1 tbsp oregano, 1 tbsp paprika, 1 tbsp onion powder, 1 1/2 tsp salt, 1 tsp chili powder

Mix in 1 cup cold water, 1 tbsp Dijon, 1/4 cup olive oil, 1/4 cup ketchup, 1 tbsp tamari
Knead into a ball

Tear off into smaller pieces and wrap in cheese cloth with twine

like so....

submerse into vegetable stock 
for 1 1/2 hours simmering 

Once its done slice it, saute it in a frying pan and eat!
