- 1 tbsp olive oil
- 1 onion- chopped
- 3 carrots- peeled and chopped
- 3 small potatoes- peeled and chopped
- 2 bay leaves
- 1 cup of split peas
- splash of apple cider vinegar
- salt and pepper to taste
in a medium sized pot, sauteed onion in olive oil, add carrot, potatoes, peas, and bay leaf.
add water until pot is about half way full. bring to a boil
simmer until peas are soft and mushy.
I like to blend my soup a little with a hand blender, but you don't need to.
